Potato & Bacon Soup With Sourdough Bread Bowl

Ingredients:
For the Soup:
– 4 large potatoes, peeled and diced
– 6 slices of bacon, chopped
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 4 cups chicken or vegetable broth
– 1 cup heavy cream
– 1 teaspoon dried thyme
– Salt and pepper to taste
– 2 tablespoons olive oil
For the Sourdough Bowls: Order here
4 small sourdough bread loaves (round)
Butter for brushing
Instructions:
1. Prepare the Sourdough Bowls:
Preheat the oven to 375°F (190°C).
Cut the top off each sourdough loaf and hollow out the center, leaving about a 1-inch thickness around the edges.
Brush the insides and edges of the bread bowls with melted butter.
Place the bread bowls on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until they are lightly golden and crisp. Remove from the oven and set aside.
2. Prepare the Soup:
In a large pot, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside.
In the same pot with the bacon drippings, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
Add the diced potatoes and dried thyme to the pot. Season with salt and pepper to taste. Cook for another 5 minutes, stirring occasionally.
Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 15-20 minutes or until the potatoes are tender.
Once the potatoes are cooked, use an immersion blender or transfer the mixture to a blender to puree until smooth.
Return the soup to the pot and stir in the heavy cream. Adjust seasoning if necessary.
Simmer the soup for an additional 5 minutes to allow the flavors to meld together.
3. Assemble the Soup Bowls:
Ladle the hot soup into the prepared sourdough bread bowls.
Top each bowl with some crispy bacon pieces.
Optionally, garnish with chopped fresh herbs like parsley or chives.
Serve immediately and enjoy the delicious potato and bacon sourdough soup bowls!
Note:
If you prefer a thicker soup, you can mash some of the potatoes with a fork or potato masher before adding the heavy cream.
